Dinner last night: Zucchini pasta w/cherry tomatoes and Sunflower Pesto (recipe at Choosing Raw) topped with some nutritional yeast flakes.
This was delicious, but I honestly missed the nut-iness that pine nuts add to a traditional pesto. It makes a nice substitute for those with nut allergies, but I would also add nutritional yeast next time for extra “cheesiness”. I’m sure it didn’t help that I forgot to add olive oil and had to drizzle it on top (whoops!)
